Ingredients for Berry Crumble

Mixed berries: This recipe uses blueberries, blackberries, red currants and raspberries. You can change the combination depending on what is available.

Lemon juice and zest: Lemon adds brightness and balances the sweetness of the berries.

Cornstarch: Helps thicken the juices released by the berries as they bake, giving the filling a spoonable consistency.

Rolled oats: Add texture and a pleasant crunch to the crumble topping.

All-purpose flour: Helps bind the crumble ingredients together.

Brown sugar: Sweetens the topping and helps it turn golden in the oven.

Cinnamon: Adds a little warmth to the buttery topping.

Butter: Melted butter brings the crumble together and gives it a rich, crisp texture.

Walnuts: Optional, but they add extra crunch and work especially well with the oats and berries.

How to make berry crumble

This recipe is extremely simple and requires just one bowl for preparation. To start, preheat your oven to 350 F (180C) and lightly grease an 8-inch (20cm) square baking dish with butter.

In a large mixing bowl, combine a variety of mixed berries. Include blueberries, blackberries, red currants and raspberries. Combine them with sugar, cornstarch, lemon zest and lemon juice. Toss everything together until the berries are evenly coated with the mixture.

Next, spread the berry mixture evenly on the bottom of the prepared baking dish.

In the same bowl or take another as you wish, stir together rolled oats with the flour, brown sugar, cinnamon and salt. If desired, add some chopped walnuts for an extra crunch. Stir in melted butter until the mixture becomes evenly moist and crumbly.

Now, spread the crumble mixture on top of the berry mixture in the baking dish. Make sure to spread it out evenly to ensure a perfectly baked crumble.

Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the mixture is bubbly and the topping is golden brown.

Remove it from the oven and serve it warm alongside your favorite accompaniment, whether it’s a scoop of ice cream or some Greek yogurt.

Tips for Making Berry Crumble

  • Use a mixture of berries. Combining sweet and tart berries gives the filling more interesting flavor.
  • Don’t skip the cornstarch. The berries release quite a bit of juice as they bake, and cornstarch helps thicken it.
  • Don’t overmix the crumble. Stir the melted butter into the dry ingredients just until you have a moist, crumbly mixture.
  • Spread the topping evenly. This helps it brown evenly while allowing the berry filling to bubble underneath.
  • Bake until bubbling. The berry filling should be visibly bubbling around the edges and the topping should be golden brown.
  • Let it cool slightly before serving. The filling thickens as it sits, making it easier to serve.
  • Add walnuts for extra crunch. They are optional, but they make the topping even more textured.

Berry Crumble Variations

Blueberry crumble: Use blueberries as the main fruit and add a little extra lemon zest for brightness.

Strawberry berry crumble: Add sliced strawberries to the mixed berries for a sweeter, softer fruit filling.

Raspberry crumble: Use mostly raspberries for a more tart and intensely fruity dessert.

Apple and berry crumble: Combine chopped apples with the berries for a delicious fall version.

Peach and berry crumble: Add sliced peaches for a juicy summer fruit combination.

Frequently Asked Questions

Can I use frozen berries for berry crumble?

Yes. Frozen berries work very well and make this dessert possible all year round. You can add them straight to the baking dish without thawing.

Can I use only one type of berry?

Absolutely. You can make the crumble with blueberries, raspberries or blackberries alone, or use any combination you enjoy.

Why do you add cornstarch to the berries?

Cornstarch thickens the juices released by the berries during baking. Without it, the filling can be much more watery.

Can I make the crumble topping ahead of time?

Yes. Prepare the crumble mixture and refrigerate it in an airtight container for up to 2 days. Sprinkle it over the fruit when you’re ready to bake.

Can I use oats instead of flour in the topping?

I recommend keeping some flour in the topping because it helps bind the oats, butter and sugar together. You can experiment with replacing part of the flour with additional oats, but the texture will be different.

How should I serve berry crumble?

Serve it warm with vanilla ice cream for dessert or Greek yogurt for breakfast. You can also enjoy it at room temperature.
