Raspberry Cheesecake Bites

Summer is the ideal season for refreshing, no-bake desserts, and these Raspberry Cheesecake Bites are among the top treats for this time of year. With their refreshing, fruity, and creamy filling coated in biscuit crumbs, they’re irresistibly delicious.

These treats are incredibly easy to make, requiring just 15 minutes of active work, yet they look impressive and are enjoyed by all.

While raspberries are used in this recipe, feel free to substitute with any other berries or fruits of your preference. Enjoy the delightful flavors of summer!

How to make Raspberry Cheesecake Bites

First, you’ll mix cream cheese, sugar, and vanilla extract together in a bowl, then add fresh raspberries and mix until well incorporated. 

Next, whip cream in another bowl until stiff peaks form, and gently fold it into the cream cheese mixture. Cover the mixture with plastic wrap and freeze it for 2-3 hours until it can be formed into balls. Meanwhile, use a food processor or a Ziplock bag to crush digestive biscuits or graham crackers into crumbs. 

Once the cream cheese mixture is frozen, use an ice cream scoop to form it into balls, and roll them in the crumbs. Place the cheesecake bites in a parchment paper-lined baking pan and freeze them for a couple of hours.

 Before serving, let the bites sit for 5 minutes at room temperature and serve with fresh raspberries for a delightful treat.
