How to make soft pretzel bites
Begin by dissolving fresh or active dry yeast, sugar, and 1/3 cup of water in a large bowl for about 5 minutes. Then, add flour, salt, olive oil, and the remaining water. Mix and knead until the dough is smooth. Cover and let it rest for 15-20 minutes.
Preheat the oven to 425°F (220°C) and line two baking sheets with parchment paper. Divide the dough into 6 pieces, which is easy to handle and not sticky. Roll each piece into a thin 22-inch (55cm) rope and cut into 1 ½ – 2 inch (3-5 cm) pieces.
Boil water and baking soda, then dip the pretzel bites for 10-15 seconds. Remove with a spatula and drain on a wire rack. Place them on baking sheets, brush with beaten egg, and sprinkle with your choice of seeds or sea salt.
Bake for 13-15 minutes until deep golden brown. For the Greek Yogurt Cheese Dip, whisk together Greek yogurt, crumbled feta cheese, garlic, lemon juice, herbs, spices, and olive oil. Dip the soft pretzel bites into this flavorful cheese dip and enjoy the deliciousness!
