This Fourth of July, let your patriotism shine with an incredible American Flag Cake that will be the star of your party. Picture a moist chocolate cake topped with creamy frosting and adorned with fresh berries, creating a stunning replica of the beautiful American flag.

Ingredients
  

Chocolate Cake

  • 1/3 cup (75ml) vegetable oil
  • 1 ½ cup (300g) sugar
  • 2 eggs
  • 2/3 cup (150ml) buttermilk
  • 1 ½ cup (190g) all-purpose flour
  • 1/3 cup +1 tbsp (50g) unsweetened cocoa powder
  • 1 tsp (6g) baking soda
  • 1 tsp (4g) baking powder
  • 1 tsp (5g) salt
  • 1/2 cup + 2 tbsp (150 ml) coffee

Chocolate Liqueur

  • 1/3 cup (80ml) water
  • 2 tbsp (30g) sugar
  • 1 tbsp (15ml) chocolate liqueur
  • 4 tbsp (50g) homemade jam (blueberry or strawberry jam)

Cream Cheese Frosting

  • 9 oz (250g) cream cheese
  • 1/4 cup (30g) powdered sugar
  • 2 tbsp (30g) whipping cream

Instructions
 

Prepare the chocolate cake.

  • Line a 9.5x7 inch (24x18 cm) baking pan with parchment paper. Preheat the oven to 350F (180 C).
  • In a bowl, mix all the dry ingredients, set aside.
  • In a large bowl mix the oil, eggs and sugar with a hand mixer.
  • Add in the buttermilk and mix until combined. Add in all the dry ingredients, mix until combined.
  • At the end add the hot coffee and mix until combined.
  • Pour the batter into the prepared pan and bake for about 50-60 mins, until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let it cool completely.

Prepare the chocolate liqueur syrup.

  • In a saucepan, boil the water and sugar for 5 minutes.
  • Remove from the stove, allow to come to room temperature.
  • Add in the chocolate liqueur, you can leave out the liqueur if you don't like it or replace it with any liqueur you like.

Prepare the cream cheese frosting.

  • In a large bowl, using a hand mixer, mix together the cream cheese, powdered sugar and heavy cream, until stiff peaks form. Set aside.

Assemble the cake.

  • After the cake is cooled, level it, using a bread knife, try to obtain a flat rectangular shape and place it on a serving platter.
  • Using a brush, spread the chocolate liqueur over the entire cake.
  • Spread 4 tablespoons (50g) of homemade jam over the chocolate cake.
  • Using an offset spatula, gently spread a thin layer of cream cheese frosting over the jam, just enough to cover the jam, try to level it as smooth as possible.
  • Arrange the blueberries in rows in top left corner to form the “star” portion of the flag.
  • Line the strawberry slices in 3 rows to form the “stripes".
  • Take a pipping bag fitted with a big star tip and pipe the frosting between the strawberry rows.
  • Take another pipping bag fitted with a very small star tip and pipe little white stars over the blueberries.
