Cottage Cheese Blueberry Buns - Easy, Quick, No Yeast and No Refined Sugar

These Cottage Cheese Blueberry Buns are soft, lightly sweet, and incredibly easy to make. Made with cottage cheese, Greek yogurt, eggs, and a little honey, they’re a protein-rich breakfast or snack and a wholesome alternative to traditional sweet yeast buns.

Ingredients
  

For Cottage Cheese Buns

  • 14 oz (400g) cottage cheese
  • 2 eggs
  • 1 tsp (5g) vanilla extract
  • 2 ½ tbsp (50g) honey
  • 1 ⅓ cup (170g) all-purpose flour
  • 2 tbsp (30g) semolina
  • 1 ½ tsp (6g) baking powder
  • 1/2 tsp (2g) salt

For Yogurt Filling

  • 1/2 cup (120g) Greek yogurt, 10% fat
  • 1 tbsp (20g) honey

For Topping

  • fresh or frozen blueberries

Instructions
 

  • Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper and set aside.
  • Blend the cottage cheese until smooth and creamy.
  • Transfer it to a mixing bowl. Add the eggs, honey, and vanilla extract to the blended cottage cheese. Mix until well combined.

  • Add the flour, semolina, baking powder, and salt.
  • Mix until everything is well incorporated and a soft, sticky dough forms.

Shape the buns.

  • Using a spoon, scoop the mixture onto the prepared baking sheet, leaving some space between each one. You should get 8 buns.

  • Using the back of a spoon, slightly wet, gently press a well into the center of each bun.

Prepare the yogurt topping.

  • In a small bowl, mix the Greek yogurt with honey until smooth.

  • Spoon the yogurt mixture into the wells of each bun.
  • Add the blueberries on top of the yogurt, gently pressing them in slightly.
  • Bake for about 30-35 minutes, or until the buns are golden and cooked through.
  • Let them cool for a few minutes before serving. Dust with no-refined powdered sugar if desired. Enjoy!
