Preheat the oven to 350 °F (180 °C) and line a baking sheet with parchment paper.
Put the cottage cheese in a blender or food processor.
Blend until smooth and transfer it into a bowl.
Add honey (or maple syrup), egg, and vanilla.
Whisk until smooth.
Add the flour, oat flour, baking powder, and salt.
Stir gently until just combined. Don’t overmix.
Fold in the chocolate chips.
Use a spoon or cookie scoop to drop rounded portions of dough onto your prepared baking sheet.
Place the cookies about 2″ (5cm) apart.
Flatten gently with the back of the scoop or your fingers, as these don’t spread as much as traditional cookies.
Bake for 13–15 minutes or until the edges are just lightly golden.
Let cookies cool on the sheet for a few minutes, then transfer to a wire rack to cool completely.
