Heat oven to 375°F (190°C). Grease and line with parchment paper an 8-inch (20cm) baking dish. Transfer the cottage cheese into the bowl of a food processor.
Blend cottage cheese until smooth.
In a medium bowl, mix flour with salt and baking powder.
Add the blended cottage cheese, egg, sugar, Greek yogurt and vanilla extract.
Mix just until a soft dough forms.
In a small bowl, add the melted butter, cinnamon, brown sugar and salt.
Mix to combine.
On a lightly floured surface, roll the dough into a 9×12-inch (25×30 cm) rectangle.
Spread the cinnamon butter mixture evenly over the surface.
Cut the dough into 6 equal strips.
Roll each strip up tightly.
Transfer the rolls into the prepared pan.
Bake for 20-25 minutes, until lightly golden and set.
Meanwhile prepare the yogurt glaze. Mix the yogurt with honey, vanilla and a pinch of salt and cinnamon.
Glaze when the rolls are warm, not hot.
