In a medium bowl, add the oats, flour, baking powder, baking soda, spices and salt.
Whisk to combine. Set aside until ready to use.
In another bowl, mix together the honey, softened butter and vanilla extract.
Add the egg and mix to combine.
Add applesauce and mix to combine.
Add the flour mixture.
Mix until just combined.
Fold in the apple chunks until evenly distributed throughout the dough.
Let the dough rest for 10–15 minutes to allow the oats to absorb some of the moisture.
Scoop the dough onto a lined baking sheet, leaving some space between the cookies.
Flatten them slightly.
Bake at 350°F (180°C) for 12–15 minutes, or until the edges are lightly golden.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
