Easy Cottage Cheese Pancakes - High-Protein, No Refined Sugar

These Cottage Cheese Pancakes are one of those easy recipes I make again and again whenever I want something quick, cozy, and satisfying. They have a soft texture, lightly crisp edges, and a delicious creamy flavor from the cottage cheese that makes them feel a little more special than regular pancakes.

Ingredients
  

  • 1 ⅔ cup (400g) cottage cheese , small curd works best
  • 2 large eggs
  • 2 tbsp (40g) honey
  • 1 tsp 5g vanilla extract
  • 1 cup (125g) all-purpose flour
  • pinch of salt
  • 1 tsp (4g) baking powder
  • Oil or butter for cooking

Instructions
 

Prepare the pancake batter.

  • In a bowl, whisk together the eggs, honey, and vanilla until smooth.

  • Stir in the cottage cheese and mix until combined. You can leave it slightly lumpy or blend it first for a smoother texture.
  • Mix in the flour, salt, and baking powder until you get a thick pancake batter.
  • If the batter feels too thick, add 1–2 tablespoons of milk.

Cook the pancakes.

  • Heat a lightly greased skillet over medium heat. Scoop portions of batter into the pan just like regular pancakes and gently spread slightly if needed.

  • Cook for about 2–3 minutes, until bubbles appear and the bottoms are golden.

  • Flip and cook another 1–2 minutes until fully cooked through.

  • Serve wit honey, yogurt, sour cream, fresh berries, or jam.
