Easy Cottage Cheese Pancakes - High-Protein, No Refined Sugar

These Cottage Cheese Pancakes are one of those easy recipes I make again and again whenever I want something quick, cozy, and satisfying. They have a soft texture, lightly crisp edges, and a delicious creamy flavor from the cottage cheese that makes them feel a little more special than regular pancakes.
In a bowl, whisk together the eggs, honey, and vanilla until smooth.
Stir in the cottage cheese and mix until combined. You can leave it slightly lumpy or blend it first for a smoother texture.
Mix in the flour, salt, and baking powder until you get a thick pancake batter.
If the batter feels too thick, add 1–2 tablespoons of milk.
Cook the pancakes.
Heat a lightly greased skillet over medium heat. Scoop portions of batter into the pan just like regular pancakes and gently spread slightly if needed.
Cook for about 2–3 minutes, until bubbles appear and the bottoms are golden.
Flip and cook another 1–2 minutes until fully cooked through.
Serve wit honey, yogurt, sour cream, fresh berries, or jam.
