Preheat the oven to 375°F (190°C). Line a baking tray with parchment paper.
In a large bowl, combine the flour, baking powder, and salt. Stir well to evenly distribute the ingredients.
Add the Greek yogurt.
Mix with a spoon or spatula until a shaggy dough begins to form.
Gently knead for 1–2 minutes, just until the dough comes together and looks fairly smooth. The dough should stay soft. If it feels too sticky to handle, add a little extra flour, one tablespoon at a time.
Transfer the dough to a lightly floured surface.
Divide the dough into 8 equal pieces.
Shape each piece into a smooth ball.
Place the buns onto the prepared baking tray, leaving a little space between them.
Brush the tops with beaten egg.
Sprinkle with sea salt and sesame seeds.
Bake for 20–25 minutes, or until the buns are golden brown and nicely puffed.
Let the buns cool slightly before serving. They are delicious warm with butter, soups, salads, or used for sandwiches.
