No-Yeast Eggless Strawberry Rolls with Cream Cheese Lemon Icing

If you love strawberry and lemon combinations you are at the right place. These No Yeast Eggless Strawberry Rolls with Lemon Cream Cheese Icing are a great summer treat that everybody will adore. They look simply amazing and totally irresistible.
10 oz(300g) fresh or frozen strawberries, cut into smaller pieces
1/4 cup (50g) sugar
2tbsp (30ml) lemon juice
4 oz(120g) fresh strawberries , cut into small pieces
Cream Cheese Lemon Icing
7oz(200g) cream cheese
1/2 cup (60g) powdered sugar
1tsp (5g) vanilla extract
lemon zest of a lemon , about 1 tsp (5g)
Instructions
First prepare the strawberry jam.
The jam can also be made a day or two day in advance, to save time. Refrigerate until ready to use. In a small saucepan put the 10 oz (300g) strawberries, sugar and lemon juice. Bring to a simmer, stirring occasionally. Simmer until the mixture is thick, for about 15-20 minutes. Remove from heat and let cool completely before using.
Cut the 4 oz (120g) fresh strawberries into small pieces.
Preheat the oven to 375°F (190°C) and grease a 10 inch (25cm) round pan with butter.
Prepare the dough.
In a large bowl whisk together the sugar with lemon zest to release oil. Add flour, baking powder, baking soda and salt. Whisk to combine.
Add plain yogurt, melted butter and milk and mix to combine. Knead for a few minutes until the dough is smooth and pulls away from the sides of the bowl.
On a floured surface roll the dough into a 12x14 inch (30x35cm) rectangle. Spread strawberry jam leaving a 1 inch (2 cm) border. Spread the strawberries pieces.
Roll the dough and cut into 8 equal size rolls. Place the rolls on the prepared pan with distance between them.
Bake the rolls for about 20-25 minutes until lightly browned.
Prepare the cream cheese lemon icing.
In a medium bowl mix cream cheese with powdered sugar, lemon zest and vanilla.
Spread the cream cheese lemon icing over the warm strawberry rolls. Enjoy!
