Pumpkin Oatmeal Cottage Cheese Biscuits - Healthy, High Protein Snack

These Pumpkin Oatmeal Cottage Cheese Biscuits have become a new favorite in our house. They’re soft, a little chewy, and full of that cozy pumpkin flavor everyone loves this time of year. They come together in just a few minutes, no fancy steps, no long list of ingredients.

Ingredients
  

  • 3/4 cup (95g) all-purpose flour
  • 1/2 cup (60g) whole wheat flour
  • 1 cup (100g) oats
  • 2 ½ tsp (10g) baking powder
  • 1/2 tsp (3g) salt
  • 1 tsp (3g) garlic powder
  • 1/2 tsp (1g) cinnamon
  • Pinch of nutmeg
  • 3 tbsp (42g) cold unsalted butter , cubed
  • 2 tbsp (20g) Parmesan cheese
  • 1/2 cup (120g) pumpkin purée , well-drained, not watery
  • 5 oz (150g) cottage cheese
  • 1 egg
  • olive oil , for brushing the tops
  • sesame seeds , for topping

Instructions
 

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix together the flours, rolled oats, baking powder, salt, garlic powder, cinnamon and nutmeg.

  • Add the cold butter.
  • Use a pastry cutter or fork, cut the butter until the pieces are no bigger than peas.

  • Add parmesan cheese and mix to combine.
  • Add the pumpkin purée, cottage cheese, and egg.
  • Mix gently until just combined, do not overmix.
  • Turn the dough onto a lightly floured surface, shape it into a round disc about ¾ inch (2 cm) thick.

  • Cut into 5 cm circles (or use a round cutter).

  • Place on the baking sheet.

  • Lightly brush the tops with olive oil.

  • Top with sesame seeds and salt.

  • Bake for 18–20 minutes, or until golden and firm to the touch.
