Romanian Green Pea Stew

This nutritious and flavorful Pea Stew is a comforting dish, a perfect choice for a delightful meal on chilly fall and winter days.

  • In a saucepan heat oil over medium-high heat. Cook onion and garlic for about 5 minutes until softens. 
  • Add carrot, red pepper and celery root and sauté for 5 minutes more.
  • Add paprika and frozen peas and give a quick stir. *For canned peas check the notes below.
  • Add the vegetable stock, tomato puree, soy sauce, salt and pepper, parsley and dill. Bring to a boil.
  • Cover, reduce heat to low, and simmer until vegetables are tender, for about 15-20 minutes.
  • Mix the cornstarch or flour with milk and add to the pea stew. Stir constantly until the stew thickens. Season with more salt and pepper if needed. Remove from heat and serve with homemade freshly baked bread, pickles and your favorite choice of meat, whether chicken, fish, red meat or sausages.

Notes

*For canned peas add the peas and water from the can only after the vegetables are simmered and tender, after step 5. Also, reduce the vegetable stock or water from step 4 to 1 cup in this case, as you use the water from the can as well. Bring the mixture to a boil before adding the cornstarch milk mixture.
