Watermelon Peach Feta Salad – Easy Fresh Summer Salad Recipe

I've always loved recipes that let fresh summer produce shine, and this Watermelon Peach Feta Salad is exactly that. It brings together juicy watermelon, sweet ripe peaches, creamy feta, and fresh herbs in a combination that feels light, colorful, and incredibly refreshing. It's one of those salads that looks beautiful on the table but takes only a few minutes to put together.

Ingredients
  

  • 4 cups  (600g) watermelon , seedless, cubed
  • 2 ripe peaches (about 13 oz - 360g) , cut in small pieces
  • 1 small cucumber (about 3 oz-90g) , thinly sliced
  • 5 oz (150g ) Feta cheese , crumbled
  • 1 small red onion , very thinly sliced
  • 1/4 cup fresh basil leaves
  • 2 tbsp fresh mint leaves
  • 2 tbsp toasted pistachios or sliced almonds , optional

For the dressing

  • 3 tbsp (40g) extra virgin olive oil
  • 1 tbsp (15g) apple cider vinegar
  • 1 tbsp (15g) fresh lemon juice
  • 1 tsp (7g) honey
  • 1 clove garlic
  • 1/2 tsp (3g) Dijon mustard
  • Salt and freshly ground black pepper , to taste

Instructions
 

  • Cut the watermelon into cubes.
  • Cut the peaches into small pieces.
  • Arrange the watermelon, peaches, cucumber, and red onion in a large serving bowl or platter.
  • Scatter the crumbled feta, fresh basil, and toasted nuts (if using) over the top.

  • In a small bowl, whisk together the olive oil, lemon juice, vinegar, honey, Dijon mustard, salt, and pepper until well combined.

  • Drizzle the dressing over the salad just before serving.
  • Toss gently to combine, being careful not to break up the watermelon or feta too much.

  • Serve immediately while everything is fresh and chilled.

Notes

  • Chill the watermelon and peaches before assembling for the most refreshing salad.
  • Add the feta just before serving to keep it creamy.
  • You can substitute nectarines for peaches if preferred.
  • For extra protein, add grilled chicken or grilled shrimp.
  • A drizzle of balsamic glaze also pairs beautifully with the sweet fruit and salty feta.
