Apples and Oats Biscotti are the perfect wholesome breakfast treat for those chilly fall mornings.Β As the autumn season rolls in, Iβve been having a craving for a warm and cozy breakfast, and nothing quite hits the spot like a freshly baked batch of biscotti. But this time, I decided to switch things up and incorporate some seasonal flavors, so I came up with an apple and oats biscotti recipe.
I always enjoy adding fruit to my breakfast recipes, as they instantly make them feel healthier and more nutritious. For this recipe, I used fresh apples and combined them with hearty rolled oats and crunchy walnuts to create a wholesome and satisfying treat. And whatβs more, these biscotti are probably the healthiest ones Iβve ever made!
The combination of apples and cinnamon creates a warm and comforting flavor that is perfect for the fall season. My daughters have also fallen in love with these biscotti, and I often pack them as a snack for their kindergarten.
Personally, I love to pair my apple and oats biscotti with a steaming cup of coffee in the morning. Itβs the perfect way to start my day, with a delightful and energizing breakfast.
For an extra indulgent treat, you can consider drizzling some homemade salted caramel sauce Β over the biscotti.Β
These twice-baked apple and oats biscotti are not only easy to prepare, but they can also be stored for several days in an airtight container, making them a perfect make-ahead breakfast option.Β
Why Youβll Love These Apple Oat Biscotti
- Crisp and crunchy β The biscotti are baked twice for their classic texture.
- Full of fall flavor β Apples, cinnamon, and walnuts make a cozy combination.
- Made with rolled oats β Oats add texture and make these biscotti more satisfying.
- Easy to make β The dough comes together with simple ingredients and no complicated techniques.
- Great with coffee or tea β Their crisp texture makes them perfect for dipping.
- Make-ahead friendly β They stay crisp for several days when stored properly.
- Perfect for breakfast or snacking β Enjoy them in the morning or pack them for an afternoon snack.
Ingredients
- All-purpose flour β Provides the structure for the biscotti.
- Rolled oats β Add texture and a hearty oat flavor.
- Cinnamon β Gives the biscotti their warm, cozy flavor.
- Baking soda β Helps the biscotti rise slightly while baking.
- Salt β Balances the sweetness and enhances the other flavors.
- Butter β Adds richness and helps create a tender texture.
- Brown sugar β Adds sweetness and a subtle caramel flavor.
- Eggs β Bind the ingredients together and provide structure.
- Vanilla extract β Complements the apples and cinnamon.
- Apples β Fresh grated apples add natural sweetness and moisture.
- Walnuts β Add a delicious nutty flavor and satisfying crunch.
How to make Apples and Oats Biscotti
Start by preheating the oven and lining a baking sheet with parchment paper.Β
Peel and grate the applesΒ before combining flour, oats, cinnamon, baking soda and salt in a medium bowl. In a separate large bowl, mix butter and sugar and then continue by adding eggs and vanilla extract. Add the flour mixture and mix well before stirring in the grated apples and chopped walnuts. Using a rubber spatula, shape the batter into two loafs on the prepared baking sheet and bake for 25 minutes.Β
After cooling for 30 minutes, cut the loafs into 1/2 inch diagonal slices and place on the baking tray and bake for an additional 15-17 minutes until dry and crisp. Finally, transfer the cookies to a wire rack to cool completely.

Tips for Making the Best Apple Oat Biscotti
- Use firm, flavorful apples. Apples that are too soft or watery can add too much moisture to the dough.
- Grate the apples rather than chopping them. This helps them blend evenly throughout the biscotti.
- Donβt skip the cooling time. The logs need to cool before slicing so they are firm enough to cut cleanly.
- Use a sharp knife. A sharp serrated knife can help you cut neat diagonal slices without breaking the biscotti.
- Slice them evenly. Similar-sized slices will bake more evenly during the second bake.
- Bake until crisp. The second bake is what gives biscotti their signature crunchy texture.
- Let them cool completely. They will continue to firm up as they cool.
- Store them in an airtight container. This helps keep them crisp for several days.
