These No Yeast Cinnamon Rolls are soft, fluffy, and filled with buttery cinnamon sugar, then finished with a creamy cream cheese icing. The best part? They don’t need yeast or eggs, so you can have warm homemade cinnamon rolls on the table in about 40 minutes.

The dough is made with plain yogurt, which helps keep the rolls soft and tender without yeast. There is also no waiting for the dough to rise, making these a great option when you’re craving cinnamon rolls but don’t want to spend hours in the kitchen.

I was really impressed with how soft these turned out, and my family loved them too. You can also change up the filling with Nutella, ground nuts, poppy seeds, or your favorite jam.

Why You’ll Love These No Yeast Cinnamon Rolls

  • No yeast – No rising time means you can enjoy cinnamon rolls much faster.
  • No eggs – A simple dough made with everyday ingredients.
  • Soft and fluffy – Yogurt gives the dough a tender texture.
  • Ready in about 40 minutes – Perfect when you want a quick homemade treat.
  • Creamy icing – The cream cheese topping pairs beautifully with the warm cinnamon filling.
  • Easy to customize – Try Nutella, nuts, poppy seeds, or jam instead of the classic filling.
  • Great for breakfast or dessert – Serve them warm for breakfast, brunch, or an afternoon treat.

What Makes These No Yeast Cinnamon Rolls Soft?

Instead of yeast, these cinnamon rolls rely on baking powder and baking soda to help the dough rise in the oven. The plain yogurt also adds moisture and tenderness, giving the rolls a soft texture without the need for yeast or a long proofing time.

Because there is no yeast in the dough, you don’t need to wait for it to rise. Once the dough is mixed, rolled, filled, and shaped, the rolls can go straight into the oven.

Ingredients

For the Dough

  • All-purpose flour – Provides structure while keeping the rolls tender.
  • Baking powder and baking soda – Help the dough rise and create a lighter texture without yeast.
  • Sugar – Adds a little sweetness to the dough.
  • Salt – Balances the sweetness and enhances the other flavors.
  • Plain yogurt – Adds moisture and helps create soft, tender rolls.
  • Milk – Helps bring the dough together and gives it a softer texture.
  • Melted butter – Adds richness and flavor to the dough.

For the Cinnamon Filling

  • Butter – Helps the cinnamon sugar spread evenly over the dough.
  • Brown sugar – Adds sweetness and a subtle caramel flavor.
  • Ground cinnamon – Gives the rolls their classic warm, spiced flavor.

For the Cream Cheese Icing

  • Cream cheese – Creates a rich, creamy topping with a slight tang.
  • Powdered sugar – Sweetens and thickens the icing.
  • Vanilla extract – Adds a delicate vanilla flavor.

How to Make No Yeast Cinnamon Rolls

  1. Prepare the dough. Whisk together the flour, baking powder, baking soda, salt, and sugar. Add the yogurt, melted butter, and milk, then mix and knead briefly until you have a smooth dough.
  2. Make the cinnamon filling. Combine the melted butter, brown sugar, and cinnamon in a small bowl.
  3. Roll out the dough. On a lightly floured surface, roll the dough into a 12×14-inch (30×35 cm) rectangle.
  4. Add the filling and roll. Spread the cinnamon mixture evenly over the dough, then roll it up tightly from one long side.
  5. Cut the rolls. Cut the log into 8 equal pieces and arrange them in a greased 10-inch (25 cm) round pan, leaving a little space between them.
  6. Bake. Bake at 375°F (190°C) for 20–25 minutes, or until the rolls are lightly golden.
  7. Make the icing. While the rolls bake, mix the cream cheese with powdered sugar and vanilla. Spread the icing over the warm cinnamon rolls and serve.

Tips for Making the Best No Yeast Cinnamon Rolls

  • Don’t overwork the dough. Knead only until it becomes smooth. Overworking it can make the rolls tougher.
  • Use plain yogurt. Greek yogurt can also work, as readers have successfully used it in this recipe, although its thicker consistency may make the dough slightly different.
  • Don’t add too much flour. The dough should be soft and workable rather than stiff.
  • Roll the dough evenly. This helps all the rolls bake at the same rate.
  • Leave a little space between the rolls. They will expand as they bake.
  • Don’t overbake. Take them out when they are lightly golden so they stay soft.
  • Ice them while warm. The cream cheese icing melts slightly over the warm rolls and creates a delicious finish.
  • Try different fillings. Nutella, ground nuts, poppy seeds, or jam can all be used instead of the cinnamon filling.

Frequently Asked Questions

Can I use Greek yogurt instead of plain yogurt?

Yes. Greek yogurt can be used instead of plain yogurt. Because Greek yogurt is thicker, you may need a small amount of additional milk if the dough feels too dry. A reader specifically asked about this substitution, and it has been successfully used.

Can I make the dough ahead of time?

Yes, you can prepare the dough a few hours ahead and keep it refrigerated until you’re ready to shape and bake the rolls.

Can I freeze No Yeast Cinnamon Rolls?

Yes. These cinnamon rolls freeze well. For the best texture, let them cool completely before freezing and store them in an airtight freezer-safe container.

Can I use a different filling?

Absolutely. Nutella, ground nuts, poppy seeds, or jam are all good alternatives to the cinnamon sugar filling.

Why aren’t my cinnamon rolls fluffy?

The most common reason is adding too much flour or overworking the dough. Keep the dough soft and knead it only until smooth. Also, make sure your baking powder and baking soda are fresh.
