These Baked Oats are a simple and satisfying breakfast made with oats, ripe banana, eggs and buttermilk. The oats are blended into a fine flour, mixed with the other ingredients, then baked in individual ramekins until golden on top and soft in the center.

Banana and a little honey add natural sweetness, while blueberries, raspberries and pecans add fresh fruit and crunch. Serve them warm on their own or with a spoonful of Greek yogurt for an easy breakfast that feels a little more special than a bowl of oatmeal.

Why You’ll Love These Baked Oats

  • Easy to make: Blend the oats, mix the ingredients, divide into ramekins and bake.
  • Made with simple ingredients: You only need oats, banana, eggs, buttermilk and a few pantry staples.
  • No refined sugar: The recipe uses ripe banana and a small amount of honey for sweetness.
  • No butter: There is no butter or oil in the baked oat mixture.
  • Easy to customize: Change the fruit and nuts depending on what you have.
  • Perfect for individual servings: Bake them in ramekins and serve straight from the oven.

Ingredients for Baked Oats

Oats: Regular rolled or old-fashioned oats work well. They are blended into a fine flour before being added to the batter.

Banana: Use a ripe banana for natural sweetness and a soft texture. The riper the banana, the more flavor it will add.

Eggs: Help bind the ingredients together and give the baked oats a tender, cake-like texture.

Buttermilk: Adds moisture and a slight tang that balances the sweetness of the banana and honey.

Honey: A small amount adds extra sweetness. You can adjust it depending on how ripe and sweet your banana is.

Baking powder: Helps the baked oats rise slightly as they bake.

Blueberries, raspberries and pecans: These make a simple topping, but you can easily use other fruit or nuts.

How to make Baked Oats

First, heat up the oven to 350F (180C). Then, lightly grease 3 ramekins that can hold 1 cup (240ml) each, or 4-6 smaller ramekins.

Now, put the oats into a food processor and let it process until it becomes fine flour. In a big bowl, mash the banana with a fork. Add the eggs, honey, salt, and vanilla extract to the mashed banana. Mix them all together well.

Pour in the buttermilk and keep mixing until everything is nicely combined. Time to add the baking powder and oat flour. Mix it up really well.

Next, divide this mixture evenly among the ramekins you greased earlier. Sprinkle some blueberries, raspberries, and pecans on top of each. You can always use different fruits.

Place the ramekins in the oven and bake for around 25-30 minutes. You’ll know they’re ready when a toothpick inserted into the center comes out clean.

Once they’re done, you can enjoy these treats on their own or with some Greek yogurt and honey. Hope you will try these Baked Oats, a breakfast that’s quick to prepare and is both tasty and good for you. Don’t forget the share the photos with me on Instagram if you try it out.

Tips for Making Baked Oats

  • Use a ripe banana. A well-ripened banana gives the baked oats more sweetness and banana flavor.
  • You can use oat flour. If you already have oat flour, use the same weight as the oats in the recipe.
  • Don’t overfill the ramekins. The mixture rises slightly as it bakes, so leave some room at the top.
  • Change the toppings. Try strawberries, sliced banana, apples, peaches, walnuts or almonds.
  • Add Greek yogurt when serving. A spoonful of Greek yogurt makes the baked oats creamier and adds extra protein.
  • Bake until just set. A toothpick inserted in the center should come out clean. Avoid overbaking so the inside stays soft.

Frequently Asked Questions

Can I use oat flour instead of blending oats?

Yes. Use the same weight of oat flour as the oats called for in the recipe.

Can I make baked oats without buttermilk?

Yes, but buttermilk gives the recipe moisture and a pleasant tang. You can make a simple substitute by adding a little lemon juice or vinegar to regular milk and letting it sit for a few minutes.

Can I use different fruit?

Absolutely. Blueberries and raspberries work well, but you can use strawberries, peaches, apples or sliced banana.

Can I make these baked oats with whole oats instead of oat flour?

Yes. The texture will be more like traditional baked oatmeal rather than a soft oat-flour bake.

How should I serve baked oats?

Serve them warm with Greek yogurt, fresh fruit and a drizzle of honey. They are also delicious with nut butter or a handful of chopped nuts.

  1. I would just leave the oats as is and not blend into flour!!

You can, for sure. Do it as you like best.

  2. If we skip grinding the oats J to flour and just buy the oat flour, what would be the measurement?

    1. Ella - Home Cooking Adventure Author says:

Use same measurement. If you have 100g out flour it means it needed 100g oat flakes to obtain it.
